Chocolate Orange Pancakes

Chocolate orange pancakes for a sweet breakfast or dessert!

If you're a Terry's chocolate orange fan, then perhaps I can easily convince you to try these pancakes. They'll satisfy your sweet tooth to say the least and are another way to enjoy pancakes. I love to think of creative ways to jazz up a simple pancake recipe, sometimes simple is great and sometimes I need a little (or a lot) of chocolate, especially with orange. These pancakes are made with oat flour instead of plain, because I still wanted to have my oats in the morning and blending them into a flour is an easy way to do this. Plus the oats still give a fluffy texture and plenty of good fibre which is how I like my breakfast to be. To make sure they taste orangey enough, I've used the juice and the zest of an orange for a real contrast  against the chocolate flavour. There's more orange on top for texture and the sweet citrusy fruit goes great with pancakes.

Recipe

Prep: 10 minutes
Cook: 10 minutes
Serves: 8 pancakes

Notes:

  • Oat flour can be replaced with plain flour if you do not want oat flour.
  • To make oat flour, simply blend porridge oats in a blender - its a lot cheaper than buying it ready-made. 
  • The chocolate sauce I used for these pancakes is Sweet Freedom Choc Shot.
  • Add chocolate protein powder instead of cocoa powder for a protein boost!

Ingredients

Pancakes
  • 100g oat flour
  • 15g cocoa powder
  • 130ml soya milk
  • 2 medium eggs 
  • ½ tsp baking powder
  • 2 tbsp maple syrup
  • zest of 1 orange
  • 50ml orange juice
Toppings
  • Orange zest
  • Orange slices
  • Chocolate sauce


Method

  1. Combine all ingredients for the pancakes into a blender and blend on high speed till mixed together. Alternatively use an electric hand whisk or a whisk with some elbow grease!
  2. Heat a large non-stick pan and add two heaped tablespoons of pancake batter into a round shape. Repeat with more batter to cook another pancake. you should have two pancakes cooking at the same time.
  3. Leave to cook for about 2 minutes till small bubbles start appearing on the surface.
  4. Use a spatula to slide under the pancakes and flip to cook them on the other side for another 2 minutes.
  5. Remove from the cooked pancakes from the pan and repeat with the rest of the pancake batter.
  6. To assemble drizzle with chocolate sauce, zest and slice up an orange. 
  7. These pancakes will keep in an airtight container for up to 3 days. Enjoy!

Whether you can enjoy it as a decent breakfast or a scrumptious dessert. My family always has pancakes on the weekend for breakfast. Pancake is also known as martabak .
