Vegan Kit Kat Stuffed Brownies

 Chocolate wafer bars stuffed between layers of fudge brownie!
Since my vegan Kit Kat cookies were such a hit, I've continued to create more recipes with the wonderful vegan Kit Kats, but this time squished between layers of fudgy brownies. I haven't just chopped up the Kit Kats and mixed them in, no no. I spooned a layer of brownie at the bottom of the tin, then I carefully arranged the Kit Kats on top in a single layer, then spooned the rest of the brownie batter on top. So it's sort of a lasagne style dessert, and I think it's the best way to go with a chocolate bar stuffed brownie. You get a beautiful soft, chewy bite from the brownie then surprisingly get some crunch from the Kit Kats - it's heaven and you'll love them. A nod to the Kit Kats with a sprinkle of wafer on top and you've got a game-changer traybake.

Notes:

  • If you cannot find the vegan yoghurt, any greek style yoghurt should work as long as its on the thicker side - this makes the brownies fudgy!
  • If the vegan Kit Kats are also hard to find and you don't follow a vegan or dairy free diet, then by all means use the standard Kit Kats. 

Ingredients

  • 220g Plain flour
  • 80g Cocoa Powder
  • 350g Caster sugar
  • 170g Butter
  • 130g Alpro greek style yoghurt
  • 100g Vegan Milk chocolate
  • 5g Baking powder
  • Pinch of salt
  • x8 Vegan Kit Kat chocolate bars - need 16 singles

Method

  1. Preheat the oven to 180℃ and grease and line a 9x9 inch square cake tin.
  2. Melt together the butter and milk chocolate in the microwave or over a Bain-marie.
  3. In a large bowl. sift together the flour, cocoa powder, baking powder and salt.
  4. In a separate large bowl, whisk together the sugar, yoghurt and butter/chocolate mix. Whisk vigorously for about 2 minutes to get some air into the mixture.
  5. Then spoon the wet mixture into the dry mix. 
  6. Spoon half of the brownie batter into the tin and spread out evenly. Line 12 of the single Kit Kat bars in a column next to each other. Then lay 2 rows of 2 Kit Kat bars so you have four horizontally underneath the columns of 12 (I hope this makes sense! if not just layer them however you can!) 
  7. Then spoon the rest of the brownie batter on top and spread out evenly and carefully.
  8. Bake in the oven for 30-32 minutes, a knife inserted shouldn't come out clean as the brownies will continue to bake once out of the oven.
  9. Leave to cool in the tin before removing. I find the brownies better once they've cooled down for a few hours and really developed the flavours. But you can wait till for about 1 hour then slice and serve.
  10. Best stored in an airtight container up to 3 days. Enjoy!
