Honey Loaf Cake with Honey Cream Cheese

A warm moist honey loaf cake topped perfectly with cream cheese icing and delicious figs


I may get some surprising and maybe disappointed eyes on me for this recipe given that it's filled with honey, however I had loads of honey to use up from last year when my mum brought some back from Greece. It felt only right to use it in a baking dish and not let it go to waste as I hate wasting food. So no, this isn't what some would deem a "vegan" recipe BUT it is dairy-free and can easily be made with maple syrup or agave. And I enjoyed every bite!

You're going to love the sweetness they honey brings to this cake. It's a very delicious and moist loaf cake, one which I'm super proud of, the cream cheese is perfectly sweet and the figs top it off nicely. I had some every night which I totally recommend.

Recipe

Prep: 15 minutes
Cook: 40 minutes
Serves: 6-8


Ingredients

Cake
100g Self-raising flour
80g Ground almonds
100g Caster sugar
1 tsp Baking soda
120ml Honey - optional to change to Maple Syrup or Agave  but may need more because of consistency
80ml Coconut oil melted
½ tsp Vanilla extract
120ml Plant based milk
Icing
200g Vegan cream cheese 
60ml Honey
2 tbsp Icing sugar - optional
3/4 Figs quartered.





Method

✿Preheat your oven to 180℃ and line a loaf pan with baking paper so it goes up the sides. Mine is a 1lb loaf pan.
✿In a large bowl, cream together the coconut oil, honey, sugar and vanilla until combined. Add the milk gradually.
✿In a separate bowl sieve the flour, almonds and baking soda and stir together. Slowly add the wet ingredients to the dry and fold till combined, but don't over mix.
✿Pour the batter into the loaf pan and bake in the preheated oven for 40 minutes or until a knife inserted comes out clean. If you notice the top starting to brown cover with foil. ✿Remove and then leave to cool completely.
✿Meanwhile make the icing. Beat the cream cheese until smooth and creamy, and then on a low speed gradually pour in the honey. For a thicker icing add the icing sugar as much as needed. 
✿Spread the cream cheese on top of the cake and then top with the figs. Serve at room temperature and keep covered. Enjoy!
