Apricot Crumble

A hearty warm crumble full of delicious apricots!

When apricots are in season the one thing you need to make is a crumble. It's super easy, with minimal ingredients and not expensive to make. Plus your family and friends will thank you for making it :) You just can't go wrong with a crumble to be honest, especially when served with a big dollop of custard or ice cream which is an absolute must for a crumble. My favourite custard is either Oatly or Alpro, so creamy and sweet and especially for vegan alternatives, they've really nailed it on the head.

Recipe

Prep: 5-10 minutes
Cook: 40 minutes
Serves:


Ingredients

5 Apricots quartered and pitted
50g Light brown sugar
1 tsp Cinnamon
75g Vegan butter chilled and cubed
40g Porridge oats
30g Ground almonds
100g Plain flour
2 tbsp mixed seeds - mine had flaked almonds, coconut flakes and seeds
2 tbsp Apricot jam or other flavour jam
Custard or ice cream to serve



Method

✿Preheat oven to 180℃. 
✿Combine the apricot quarters, cinnamon and apricot jam in a bowl then spoon into the bottom of an ovenproof dish.
✿To make the crumble topping,place the flour, ground almonds and butter in a mixing bowl. Using y0ur fingers rub the butter into the flour until it resembles a crumbly texture. 
✿Add the sugar and oats and stir together. Sprinkle the crumble over the apricot mixture in the dish and then sprinkle on the flaked almonds.

✿Bake in the oven for 40 minutes until the crumble is golden, the apricots are soft and bubbling. 
Leave to cool about 5 minutes then serve with the custard or ice cream. Enjoy!
