My blondies are nice and chewy, gooey and oozing with lots of chocolate chips!
If you love the classic cookie combo you'll love these in Blondie form. It's like having a very chunky cookie only more flavourful. Plus you can whip these up in less than an hour which is great if you need some little treats for friends and family or a tasty little dessert for yourself which I highly encourage :) You can swap out the chocolate chips for white chocolate which would also be yummy.

Ingredients
180g Vegan butter
220g Light brown sugar
100g Caster sugar
60ml Soya milk
2tbsp Chia seeds + 6tbsp water = 2 chia eggs
220g Plain flour
1tsp Vanilla extract
2tbsp Almond butter
1tbsp Baking soda
1tsp Baking powder
Pinch of salt
300g Vegan chocolate chips
Method
✿Preheat the oven to 180℃ and grease and line a rectangle baking tray with baking paper.
✿Using an electric mixer, beat together the butter and both sugars until fluffy. Add in the almond butter, vanilla and chia eggs and beat again till mixed together.
✿In a separate bowl combine all of the dry ingredients except the chocolate chips. Then add this to the butter mixture and mix together.
✿Pour in the soya milk whilst on a low speed then using a wooden spoon fold in the chocolate chips - save some to sprinkle on top.
✿Spoon the mixture into the prepared baking tin and spread out evenly. Sprinkle on the remaining chocolate chips and then bake in the oven for about 30 minutes until the edges start to brown. Don't over cook them otherwise they won't be gooey inside.
✿Once baked leave to cool completely before removing from the tin and cutting into squares. Enjoy!
